Xenogears
Xenogears is a (fairly) recent release by Squaresoft. Although it lacks the graphical sophistication of FF7 or FF8, it well makes up for it in plot and storyline. The game takes at least 55 hours to win, and unlike recent Square games, is quite a challenge.
